The Chinese made the predecessor of ice cream as early as 200 BC: they mixed milk with rice and then frozen it under a snow cover. It also happened that simple juices were put on the snow and eaten as a coolant. It may have been the ancestor of today’s sherbet.
After the “icy miracle” reached the Roman Empire, Roman emperor Nero became addicted to it. He sent his men into the mountains, brought snow from there, and mixed it with fruit and juices. This special hike at the time could clearly only be afforded by the upper strata, as not many could make pilgrimages to the mountains for snow. So in those times, ice cream was a real luxury item.
One of the earliest ice cream recipes comes from Marco Polo, who brought the iced goodies straight from China to the Italians. This recipe was also more like the sherbet known today, but it laid the foundations for real creamy ice cream in Italy.
The first place to start selling ice cream was the French Café Procope. It has been offering iced delicacies here since the 17th century, and this café still operates today. The ice cream at the time consisted of a mixture of milk, cream, butter and eggs. Napoleon also liked to come here for ice cream and was a big admirer of sweets.
